A stiff dumpling made from fermented maize dough and eaten with soup or stew. Whitby (1968) describes soaking the maize, fermenting the dough for about two days, then cooking it in boiling water with vigorous stirring and shaping it into balls; she calls Ewe akple a softer form of banku.
Banku was served with okra soup.
