A stiff maize or millet porridge of northern Ghana, served with a soup of ayoyo or bra leaves and often a dawadawa-seasoned stew. Commonly abbreviated TZ, it is the everyday staple across Dagbon and has spread nationally through northern migrant communities. The name derives from Hausa tuwon zafi, hot porridge.
Tuo Zaafi is eaten by hand with ayoyo soup poured over the mound.
